FOOD in all its glory has appealed to Jason Bradford since he was a teenager, and at the ripe age of 17 he decided to make it his livelihood.
With a passion for serving up local produce done differently at Jason’s Restaurant in Guys Hill, Mr Bradford passes his drive and love of the culinary creation onto his many apprentices.
“I say to my apprentices anything you want to cook, go for it!
“It’s like an open pantry in my kitchen, and I give their recipes a go and add them to the specials board, and some if they’re good enough end up on the menu,” he said.
Learning the basics at Clover Cottage in Berwick as an apprentice himself, Jason won silver in the Apprentice of the Year competition, and has since carved himself a winning business recipe.
At 23 years old, Mr Bradford opened his first restaurant in Beaconsfield.
“I knew from a young age what I wanted to do, and I’ve lived in the area my whole life and hope to be in upper Beaconsfield for a while,” he said.
Mr Bradford recently bought the iconic Glendower restaurant and reception centre and has big things planned for the historical venue.
“We’ll bring the same menu to Glendower which will be renamed Jason’s Restaurant at Bradford Winery.
“I want to add a bar and tapas menu, so people can sit out on the deck and soak up the beautiful view on a Sunday afternoon and snack,” he said.
It is an exciting new venture in Upper Beaconsfield with room to expand, and Mr Bradford said what made his job so enjoyable was the fact that no day was the same.
“You can do anything you like in the kitchen.
“It’s only as boring and complacent as you make it, especially when you own the business you can pick and choose what you want,” he explained.
With dreams of a vineyard and cellar door at his new venue, Jason is looking forward to bringing life back to an old favourite and providing a reception centre for weddings and events.
“Sky’s the limit here with such a beautiful historic home with a view and it’s another challenge for me,” he said.
