1. The word “gelato” comes from the Italian word “congelato”, which means frozen. A gelato shop is called a “gelateria” and the person serving it is called “gelati.” It is best served the day it’s made.

2. Gelato originated in Italy and its modern-day form is credited to Francesco Procopio Dei Coltelli. He created the first ice cream machine and opened his first cafe in Paris in 1686. King Louis XIV granted Procopio an exclusive license, making him the only producer of gelato in the region.

3. It is best to eat gelato that is gathered up with a spade or paddle, not an icecream scoop. The surface of a spade or paddle is flat and is a better fit to gently scoop up your gelato. It does not only allow you to work the gelato smoothly to make it softer but it also encourages an artistic touch upon serving.
